3 oz. ground chuck
3 oz. braised short rib meat, pulled
1 T. minced shallots
1 tsp. minced garlic
1 T. celery brunoise (tiny cubes)
1 T. red pepper brunoise
1 tsp. house seasoning*
1 T. smoked tomato jam**

1. Fold all ingredients together.
2. Pack tightly in a mini loaf pan and bake at 350°F for 12-15 minutes.
3. Add tomato jam.
4. Let rest for one minute.

granulated garlic
onion powder
dry thyme

smoked tomato jam **
ingredients: 8 oz. cherrywood smoked bacon, chopped
1 T. minced garlic
1 onion, diced
3 smoked tomatoes
2 c. light brown sugar
2 c. sherry vinegar
1 T. fresh thyme

1. Render bacon and add onion and garlic.
2. Sauté until translucent.
3. Add remaining ingredients and cook down over medium heat for 15 minutes.
4. Allow to cool and purée.
