A healthy twist on dessert fare, this berries & cream recipe is sure to cure a sweet tooth, save you calories, is gluten free, and avoids animal by-products! Need I say more? Actually, it makes a great anytime snack, too. And just look at those pug bowls!!! Make it organic and I'd say this is the best berries & cream recipe on the planet.
Assorted berries and plums (I used plums, raspberries, blueberries)
1 can coconut milk
3/4 cup raw cashews (not roasted)
3/4 cups water
4 tablespoons agave
2 tablespoons vanilla extract
Sea salt, to taste
For cashew coconut cream, blend all ingredients (except berries) until smooth. Fill bowls with berries and sliced plums and top with cream.
Garnish with fresh mint, if you're feelin' crazy.
I also ate this for breakfast the next day, topped with protein packed hemp seeds.
