This meat & potatoes hearty brunswick stew recipe comes from Mojo Barbecue
1 T. canola oil
3 c. potatoes (3/4- inch dice)
1 c. Vidalia onion (1/2- inch dice)
1 c. fresh shaved yellow corn
1 c. lima beans
1 qt. chicken stock
1 1/2 c. BBQ sauce (Rust recommends Mojo's house sauce)
1 T. iodized salt
1 T. black pepper (table grind)
3 c. canned chopped tomatoes
1/2 lb. pulled pork
3/4 lb. pulled smoked chicken
1. Sauté onion in one tablespoon of canola oil over medium heat until translucent.
2. Add diced potatoes, corn, lima beans and chicken stock. Bring to a boil, reduce to simmer until potatoes start to soften.
3. Add tomatoes, BBQ sauce, salt and pepper. Continue to simmer for approximately 20 mins. Stir in pulled pork and chicken.
4. Serve with corn bread
