Marinated Mixed Grill from India House • From the June 2012 Jacksonville Magazine
2  U12 jumbo shrimp
2 pieces of boneless lamb, cubed
2 boneless chicken breasts, cut into large pieces
½ small (2.5-3 lb.) chicken with bones
3 tsp. fresh garlic, chopped
3 tsp. fresh ginger, chopped
2 tsp. coriander powder
2 tsp. cumin powder
3 tsp. garam masala
1 serving spoon of plain yogurt
4 tsp. lemon juice
3 tsp. salt, or to taste
2 tsp. red chili powder, or to taste
4 tsp. vegetable oil
Red or yellow food coloring (optional)
For garnish: onions, bell peppers, tomatoes, lemon, cilantro
Combine fresh garlic and ginger in a food processsor or mixer, and blend until smooth to create a paste. Empty paste into large bowl. Add all other ingredients, except shrimp, to the bowl. Marinate meat for four or more hours; ten minutes before cooking, add shrimp. Heat oven to 350°. Transfer contents, except shrimp, to an oven-safe baking dish and cook for 35 minutes. Add shrimp, then cook for an additional 10 minutes. Remove dish from oven and garnish with sliced onions, bell peppers, tomatoes and sliced lemon. Garnish with fresh cilantro.
